I haven’t been discussing weight lately, because, frankly, I am tired of thinking about dieting. I had been eating for two while Dave was in Dublin.

When he returned I had gained weigh more than I thought—almost 17 pounds, most of it right around my gut. There is a big reason why the word gluten has the word gut right in it. Gluten just makes the gut fat and expand. There is science behind it. Gluten is the evil twin of fat. I’m convinced and this is how I know.

Since David’s return, we both have gone on fairly strict diets, trying to lose our “I-miss-you” weight. We are both vegan, but veganism isn’t really a diet, it’s a planted-based way of life, which is about helping—not harming—the earth. In so doing, veganism returns your body to health and vibrance with whole food.

However, veganism can lead to eating more simple carbohydrates than one may need, especially if you start eating glutenous bread, which I did. I had read much information in the vegan blogs and Vlogs and also listened to the patter that most of these vegan gurus say: you basically eat as much as you want to when you’re a vegan. Of course, this cannot be true, since scientifically food is energy and caloric; therefore, you can—and will—put too much food into the body if you overeat. It makes sense. But, for some reason, I was convinced that I was somehow exonerated from dieting because I am totally vegan.

I decided to cut back on the wheat and eat gluten-free bread and pasta. I noticed, however, that a great deal of gluten-free products are not vegan, which means these products contain egg and milk derivatives. If you are a fairly new vegan, you may not remember to check every ingredient label for words like dairy and whey. Yes, these are not plant-based and on a vegan diet.

When I returned to a few of the wheat-based products that were vegan, even though they were whole grains and tasted as if I was eating right from the garden, I was still steadily developing a gut. It wouldn’t go away no matter how many laps I swam, yoga I did, or sit-ups I tortured myself with.

One wise man ate dinner with me a week ago and noticed that I had ordered white jasmine rice. He said to me, “I’m really shocked that you’re still eating that crap!”

Of course, I was a bit shocked, believing that Jasmine Rice was one of the best choices I could make. He continued, “You might as well be stuffing your gut with sugar and gluten.”

David looked over at me and said, “You mean we have been eating white rice, not brown?”

I said, “Duh, can you not see what you’re eating on your plate?”

He said, “I always ate brown rice in Dublin. We need to go back to doing that.”

If I’m anything, I’m open to change and see where it gets me. Almost immediately my waste began to trim down. After only a week, just from changing from white to brown rice and staying clear of the gluten again, I’m back to one waste size lower—already—IN ONE WEEK.

I just have one more thing to say:

Going Gluten Free: Heal Yourself from Arthritic Pain, IBS, Stomach Issues, Weight Gain, and Even Dementia

Changing your diet is a big leap for anyone, after eating certain food that comforts your for an entire lifetime. Suddenly a food craze that really makes sense comes along, and every aisle of the grocery store begins to change! You have to wake-up and decide is this new diet right for you!

After much reading and exploration, you discover that genetically modified gluten is the problem with your digestive system, causing it to be acidic, exacerbating your stomach problems, and causing free radicals to go to your brain, reeking havoc and  disorientation, and also challenging your arthritic condition and muscle aches. (Grain Brain, Perlmutter.)

So, all wheat products and some soy products are now considered unsafe to consume, then, what is safe to eat? Today, the Chef to vegetarian dignitaries and teacher of healthy cooking to food enthusiasts, will lead you through every detail of what you can eat, your food substitutions, ways to make healthy, fast meals, and stay gluten free. I lost 20 pounds in 3 months, and my body fat went from 29.9% to 13.9, as well. These are considerable changes for any person, especially someone who is 53 and had struggled with arthritis and stomach problems his entire life. EVERY ISSUE CHANGED IN A MATTER OF TWO WEEKS! So, you can understand why I want to tell the world, especially my friends and clients.

Today is the book launch for my new cookbook: Gluten-Free, High Protein Cookbook and Recipes: Easy Meals in Less than 30 Minutes, which means the book will be FREE to my friends for exactly 5 days on Amazon and Amazon Kindle (ending Monday, August 11).

Obesity is a huge problem in the world today! The solution to this problem, also, could be a gluten-free diet. When I took the gluten out of my own and client’s diets, all of us immediately began to see signs of relief with weight gain and arthritis, even the IBS. We had more energy. We were able to eat more vegetables without stomach upset. We felt as if our bodies let go of a heavy weight, as muscles began to become supple again. The longer I stayed on the diet, the more I was able to get back to eating just protein and veggies, which is the healthiest and most energy-giving diet I can use.

Personally, I’m a yogi. So, for years I have gingerly rolled out of bed and on to the floor, because sleeping caused such back and hip problems, as an arthritic condition does. Within a month of going gluten free, I had begun to get back to my health from twenty years ago. I get right out of bed now and do a yoga practice that is worthy of being called a practice. I can easily put my palms to the floor as I bend over.

Here are some ideas I used to keep me gluten free and energy packed with protein and remain an almost vegetarian. Also, gluten free DOES NOT mean vegetarian at all. You can always substitute your favorite meat in any of the recipes and easily make the change to Gluten Free TODAY! You simply need some helpful suggestions that will take you through the change.

Preparing a meal is like painting on a canvas. Each ingredient you choose adds a special color and texture to your food. When you realize that each time you eat, you have an opportunity to impact your health, you may consider making better choices each time. To do this, we must reach into our food palate and take out the proper amount of:

fat; and

For a normal meal for a thriving adult, we need from 18-21 grams of protein for each meal to get the proper amount of energy from our food. Good sources of fat, such as avocado, can be great brain food, as the right fat is necessary for your brain to function. (Grain Brain, Perlmutter.)

But, when it comes to carbohydrates we have the added responsibility to separate the good from the unhealthy. Vegetables and fruit are in the category of complex carbohydrates. Bread, pastry, potato, even pasta are mostly simple carbohydrates. However, when food is fresh, instead of processed, you can be assured it is essentially better for you. Yes, broccoli may be a better carb than potato. But potato or rice is better than bread, even if it is gluten free. Our bodies can sense natural food and process it more easily.

A healthy food practice is to shop in the perimeter or outside of the food aisles in a grocery store. Most of the processed food is in the internal aisles. The fresh food stays in refrigeration around the perimeter of the building. Stick with this idea, and you’ll be on the road to healthier eating.

What Kind of Pasta & Bread Should I Buy?

Since we are working with a gluten-free diet, make sure the pasta and bread has a gluten-free symbol on it. Your choices are rice-based, corn-based pasta, or a combination of both rice and corn. Even companies like Barilla are getting on board with cheaper versions of what used to cost double what you pay now. Actually, if you look hard enough, even cereal aisles in your grocery store are now carrying gluten-free products. For bread, Udis is about the best for taste. It’s a little more expensive than other bread, but you’ll find you eat a lot less, once you begin the diet.

Gluten-free products were a five billion dollar industry in 2013 and, I believe, that as people realize the advantages of a gluten-free diet, the demand will rise. More companies will get on board, and the prices will go down. So, look for price reduction in the future, especially with the bread.

My book is filled with easy and basic ideas like the ones above, including simple recipes for any novice to follow. Even if you’re not interested in the recipes, the book is an essential handbook to figure what to eat and what not to eat.

After Three Months of Gluten Free #diet #health #weightloss #weightgain #glutenfree

I got on the scale 3 days ago and, alas, I hit my 20 lb. loss mark! I was so excited, I overate for three days and gained 3 pounds back. But, I didn’t just eat the way I had been eating the prior three months, I ate some pasta and bread—gluten! I feel awful. Not just psychologically, because I have back-peddled, but my stomach aches, my belly is bloated, and I can’t think straight. All of my symptoms have been chemically and physiologically related to eating wheat. If you haven’t tried going gluten free, you may want to try the diet after reading this blog.

For ten years I had been experiencing IBS symptoms, migraines, and developed a bad arthritic condition, specific to my right hip flexors. After eating, I always felt sick to my stomach, acidy, which would lead me to eating more carbohydrates to settle the discomfort. After entering my forties, I wasn’t able to slough off the extra pounds so easily. And, unfortunately, the weight collected around my belly, no matter how many abdominal exercises I did. Also, the aches continued to worsen, even though I did yoga 3-5 times a week.

Here is the scientific low down on gluten:

1.) All of today’s wheat has been genetically modified (MGO), which causes a chemical similar to an opiate to react with your brain. Scientists from the wheat industry modified many years ago wheat to keep us eating those bad carbohydrates.

2.) A syndrome called “wheat belly” is common in people who eat or drink too many wheat products. Basically, this is a potbelly (from beer, vodka, and too many carbohydrates). Sorry, friends, most vodka and beer are made from wheat. However, the good news is that there are some beer and vodka that is gluten free now.

3.) Systemically, wheat belly causes an acid base, first, in the stomach, then in the entire body. An acidic body causes pains, aches, and an inability to heal efficiently.

4.) Your brain is also effected by this GMO wheat. When you eat wheat, free radicals flow to the brain, linked to many brain diseases: dementia, migraines, Alzheimer’s, and depression, to name a few.

I, personally, found that after being gluten free for just two weeks, almost all of my stomach symptoms went away. I began to feel that my mind was clearer and my migraines—which were happening 2-3 times a week—have gone completely. I, also, began to see a major difference in the arthritic condition in my body. After 3 months, I can do poses in yoga I haven’t been able to do for ten years.

So, why would I “choose” to eat wheat after 3 months, losing 20 pounds, and feeling so much better? The syndrome is called “a habit.” Habits are not just connected to your deductive brain, they are a neurological problem, as well; especially when chemical dependency is your problem. If you think you can WILL yourself to quit smoking, stop using drugs, or lose weight, you are probably wrong. I have been a hypnotherapist for over 20 years, helping people make effective change. The constant in this process is the inability to keep your habit changed for 2-3 years. Scientists have recently proven that specific to weight loss, the body and brain continue to want to return to homeostasis, which means it resists change for up to 3 years. So, your diligence to keep the change happening (diets, alcohol or drug free, smoke free) for that long is imperative to making lasting change, especially with diet.

So, will I go back to being completely gluten free today? You bet my ass I will!
